Qué harás

You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . In a maximum 6 people class, we will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two tipical italian sauces. The experience includes a delicious tasting of homemade prosciutto hand cut.
We can also accomodate GLUTEN allergy guests for a very tasty fresh pasta and VEGAN guests for pasta without eggs.
We will cook all pasta and the sauces made during the class, eating our differents kind of pasta done, sipping good italian wine. An express tiramisu preparation will follow as a dessert. Moreover, to all the participants will be offered complimentary, the exclusive Professional Chef Hat with logo of "Pastificio Faini" and also the apron with logo. In additional to the regular program, everyday of the week a different version will be presented: Monday-Wednesday-Saturday Carbonara sauce; Tuesday-Friday Cacio e Pepe sauce; Thursday gnocchi!

I'm chef and pasta maker. My parents worked in their "pasta shop" for 40 years making pasta with passion. Five years ago, I opened my own pasta shop and I was very surprised to have been named among "the best 10 Pastificio in Rome".
I have also been reviewed on the prestigious " Il Gambero Rosso" guide from 2017.
I've been inspired by the "magical" pasta made by my grandmother when I was a child and I'm so proud to teach how to make this special pasta to everyone. Transmit all the love and passion of my family, today, represents my dream.

It was an amazing evening at Emanuele's Pasta Lab. We arrived at a very neat and clean place with a beautifully decorated table. The lab is modern and very well equipped. Everyone had enough space to prepare their set of pasta and to observe the necessary "Corona-distance". He explains everything very well and you just feel his passion for pasta and sharing it with others. He answered all our additional questions. He offered free wine and delicious tasters of cheese and ham during the preparation, as well as Limoncello and Tiramisu after the dinner. We highly recommend booking a pasta class with Emanuele.

I have an egg allergy, and assumed I would not be able to eat the typical handmade Italian pastas. Emanuele’s class actually included an egg-free pasta, and he was able to tailor the experience for me. He spent a lot of time explaining everything and answering our questions. It was great!

Such a great experience! We enjoyed so so much the Class that we will never forget. Emanuele is so passionate about what he does, it’s a real added value on his side cause it let you dive 100% into this experience. We learned how to make fresh pasta like your old grandma would do, using ancient techniques. He shared also, in a real competent and technical way, his knowledge about pasta, being careful to list anything you need to know in order to make it yourself once at home. The course was full of surprises and small gifts which made our experience even more tasty. We also had a lot of fun! Highly suggested!

We thoroughly enjoyed our pasta class. Emanuele was welcoming and friendly, he clearly explained and demonstrated the steps and then allowed us to try our selves. He explained the different types of flour and benefit of making pasta from hand. I am now eager to go home and try this! After making the pasta we then sat down to eat our creations and it was really very good. I would recommend this to anyone visiting Rome.
