Cooking classes in Mexico can be a wonderful experience, but what happens when you return home and can't find the ingredients to make it on your own? I've got you covered.
We'll meet for a tour of Mexico City's exotic market—Mercado San Juan. I'll give the highlights of its history and we'll stop by a few of my favorite vendors where you'll have the chance to sample and/or purchase seasonal fruits & veggies, chiles, spices, mezcal, and the pre-hispanic protein staple—insects!

From there it's a short walk to my kitchen in Centro Histórico where we'll get down to some hands-on cooking!

We'll learn how to prepare* (and chow down on):

/ Classic Tinga
/ Tamales
/ Chilaquiles
/ Agua fresca (seasonal)

I'll also give a brief knife handling demo for those who would like it, facts about our ingredients, cooking techniques, uses for would-be-organic waste, nutrition and gut health information, as will follow up afterwards with a digital recipe book and global guide to Mexican ingredient shopping with brick & mortar as well as online resources.

I recommend booking towards the beginning of your trip so you can take advantage of our time together and ask for any suggestions you may like for the rest of your trip.

I started working in my grandfather's butcher shop at the age of 6, wrapping customers' packages in the same style as he had since the 1940's. Surrounded by nature, we spent our free time hiking, camping, fishing, and hunting. The dichotomy of the two food systems—self-sustainable vs. supermarket—inspired me to only eat the things I could grow or hunt, and cook myself.

I've maintained some form of this ideology for the past 29 years while traveling the world to gain knowledge and hone my skills. At 21, I began making the world my culinary classroom by making pasta with Italian experts in Florence, apprenticing with a Four Seasons/Cordon Bleu chef, sous cheffing a test kitchen in NYC, mastering luau emus with native Hawaiians, and now pressing tortillas with the abuelas and street food masters of CDMX.

Just minutes walking from Bellas Artes in Centro Histórico, you'll join me in my kitchen loft in a bank building which dates back to the early 1900's. You'll be surrounded by some of the best street food and better kept secrets in the city: 2 blocks from the Zócalo, around the corner from la Pastelería Ideal, el Moro, and one of the city's most exciting markets, Mercado San Juan (the "exotic" or "insect" market) where our class begin!.

One of the highlights of our time in Mexico City. Tim’s encyclopedic knowledge of Mexican history and gastronomy brings everything to life the way only a unique (dare I say genius) mind can. Back at the kitchen loft our group bonded over preparing an amazing lunch. I cannot recommend this enough. Tim is one of those special people you rarely if ever meet but will always remember. Great experience with Tim. He was very friendly and knowledgeable. We had a great tour of the exotic market, and tasted some fresh fruits and coffee. Then we headed back to his loft and learned many things about Mexican ingredients, cooking styles, and food history. Overall a very pleasant and informative evening!

Highly recommend. Tim is a wealth of knowledge and love his personal style of teaching. Hands down one of the best cooking classes/tours I’ve done and I’ve traveled quite a bit 😉
