Chef Jose Alarcon is one of the most celebrated rising stars in the culinary world. He recently opened Popol Vuh — an upscale Mexican restaurant, which you'd be lucky to land a reservation at — and, right next door, his common-man project called Centro. The barbacoa tacos and chips & guac are not to be missed. Sure, you've had tacos before, but not like these!
