Led by award-winning chef, Mark Briggs, the kitchen team offer a cuisine that includes modern Australian, modern European and seafood. Fresh Gippsland produce is used in the menu which features charcuterie and cheeses, hand-made pasta, lamb, beef and Gippsland seafood.
